Every time I post my meal plan on Instagram and include this sauce, I get about one million requests for the recipe. I usually estimate it and get creative every time but it’s too good to not share so I hit the kitchen to perfect it for you and perfect it, I did! This is similar to pesto but way creamier, richer, and dare I say, one of my favorite recipes of all time.
I love adding a dollop to grilled chicken + summer veggies or stirring into a warm pot of brown rice pasta with italian chicken sausage. You could even use it as a dip for your next party or spread it on a slice of toast and add crispy prosciutto. It’s super versatile and so easy to create.
Creamy Garlic Basil Sauce (Paleo, Keto, + Whole30 Compliant)
1.5 c unsalted cashews
1 c basil leaves
1/2 c filtered water
1/4 c extra virgin olive oil
1/4 c nutritional yeast flakes
3 T ghee, melted (I love using a brown butter ghee!)
4 cloves of garlic
3/4 tsp sea salt
1/2 tsp black pepper
In a high powered blender or food processor, add cashews and pour enough hot water to barely cover the cashews. Let sit for 30-60 minutes. Drain hot water and add all remaining ingredients, blending until smooth. Add equal parts olive oil and filtered water to reach desired consistency (thicker for dips and spreads, thinner for sauce). Store leftovers in airtight container in the fridge for 3-4 days.
